Oaty Lunchbox Slice
Put the kettle on… this oaty slice is your new favourite afternoon snack. There’s no added sugar but the sweetness craving that often hits around the 3pm mark is satisfied thanks to the dates. It’s also nut-free so can go in the school lunchbox and with only four ingredients, you can whip it up in no time.
You will need
- 250g rolled oats
- 200g dates soaked in 150ml hot water for 20 minutes
- 50mls extra virgin olive oil
- 50g wholemeal flour or coconut flour for wheat-free version
- Optional 100g of currants or dark chocolate drops
What you do
Blend the dates and water in a food processor until smooth then transfer to a mixing bowl with the rest of ingredients. Once combined, press the oat mixture into a lined small baking tray and place in the oven at 180°C for 35 minutes or until golden on top. Cut into squares and let cool.
