Pikelets make a tasty snack or toast substitute at breakfast. This is a base recipe that’s used berries but you can mix it up with dates and grated carrot, banana and chopped nuts, or anything you like. Dial up the honey and vanilla if you prefer it sweeter. It’s also easy to remember because it’s about one of everything.

You will need

  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 tablespoon honey
  • 1/2 cup plain yoghurt
  • 1 cup wholemeal or plain self-raising flour
  • 1 teaspoon cinnamon
  • 1 cup oats
  • 1 cup berries (frozen are fine but let them thaw a bit before cooking)

What you do
Heat a frying pan over medium heat.

In a large bowl, gently whisk the egg with milk, vanilla, honey, and yoghurt. Add the self-raising flour, cinnamon, and oats and gently mix together. Stir in the berries.

Place a heaped tablespoon of the mixture into the pan (should fit 5 in one go). When small bubbles appear, flip them over and cook for a minute or so until cooked through.

Makes around 18.

Keeps in an airtight container in the fridge for a few days or freeze.
