We love peanut butter. By that we mean we love REAL peanut butter, made from peanuts only. And a pinch of salt, of course. You can get some excellent brands in Australian supermarkets now – we use Mayver’s or Pic’s.

Full of good fats and protein, peanut butter is a great replacement for oil in this easy and health(ier) oat bar recipe. This peanut oat bar is prepped and out of the oven within 30 minutes.

You will need

  • 200g rolled oats
  • 50g almond meal (or another flour of your choosing)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt to taste
  • Handful of chocolate chips (optional)
  • 1 tbsp of chia seeds (optional)
  • 2 large eggs whisked
  • 175g crunchy peanut butter
  • 1/2 cup of runny honey
  • 1 tsp vanilla essence

What you do

Whisk the eggs, honey, peanut butter and vanilla essence together until well combined. Stir in the baking powder and cinnamon then mix in all other dry ingredients. Flatten mixture into a lined small baking tray and place in the oven (heated to 160°C fan assisted) for 15-20 mins.

Our tip: don’t bake for too long as this can dry the mixture out.

  1. These went down well with the troops! Substituted sesame seeds for the chia (because that’s what we had lying around), worked well.
