Here is our perfect alternative to avo on toast which can work for breakfast, lunch and dinner. Crisp and fresh zucchini (or courgette for the British half of FFK), is low in calories and packed with vitamins and minerals. Lightly fried and drizzled with lemon juice and goats cheese, zucchini is your new healthy addition to toasted sourdough and olive oil. Just add sunshine!

You will need

  • 3 zucchini, chopped into 1/2 inch thick rounds
  • Toasted sourdough x 4 pieces
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Goats cheese
  • Sakt and pepper to taste


What you do

Fry the zucchini rounds in 1 tbsp olive oil in a large frypan in one layer until brown on both sides. Turn of heat and toss in lemon juice and salt and pepper. Drizzle sourdough with olive oil and top with hot zucchini and crumbled goats cheese. Serves 2 for lunch.
