
A Speedy Two-Minute Mango Salsa Recipe
Ever bought a tray of mangoes because they were super cheap but then wondered how on earth you’re going to get through them all? Put them to good use with this speedy two-minute salsa.
There are only four ingredients and they combine to give the perfect mix of sweet, sour and spicy. We like it best with seafood – particularly salmon, white fish or prawns – but it would also work beautifully alongside white or red meat. Serve with roast potatoes and/or a cucumber salad.
Fun fact: one half of Fad Free Kitchen is not a fan of coriander and it turns out there is a scientific reason for the intense dislike so if you’re in the ‘hate it’ camp, feel free to omit the coriander and throw in a chopped cucumber instead.
This recipe serves four as a side.
You will need
- 2 mangoes, chopped
- 1/2 bunch of coriander, chopped
- 1 lime, juiced
- 1-2 red chillies, finely chopped
What you do
Combine everything in a bowl and mix well.
Note: if your lime turns out to be a disappointment on the juicy front, add a little of the zest too.
