School is back next week so it’s time to stock up on healthy snacks you can throw in the lunchbox quickly to minimise the morning madness. These delicious carrot, date and apple muffins are simple to make, nut free and freeze well so can double as an ice brick in the warmer months.

They are also an excellent way to up your fibre intake, which most of us need to be doing. If you don’t have a food processor simply grate the carrot and apple and chop the dates.

This recipe makes 12 muffins.

You will need

  • 6 dates
  • 1 small carrot
  • 1 medium apple (green or red)
  • 1 egg
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1/2 cup natural or plain Greek yoghurt
  • 200g wholemeal flour
  • 3 tsp baking powder
  • 2 tsp cinnamon

What you do

Preheat oven to 180ºC (fan forced). Line a muffin tray with 12 cases. Whiz together the dates, carrot and apple in a food processor until very finely chopped. In a large bowl, lightly whisk the egg, honey, vanilla extract, milk, yoghurt and baking powder until just mixed. Stir in the date/carrot/apple mix. Add the flour and cinnamon and mix until just combined. Spoon evenly into muffin cases and bake for 20 minutes or until light brown on top. Eat warm or cool.
